Here is a tip that has saved me some money. Sometimes you need corn chip crumbs for casseroles, but why waste the nice big corn chips? Instead, save all the crumbs from each of your bags in a baggie in the freezer. Then when you need them, pull out the bag and use them! YEAH!
So tonight's dinner (continuing with the Mexican theme) is a variation of my mom's recipe for Taco Casserole. You already have the filling from last night. Add a few crumbs of corn chips and a can of tomato paste. Stir. Pour more corn chip crumbs on top until covered. Take your leftover shredded cheese from last night and cover chips. This is TOO YUMMO! Bake until cheese melts and is ooey gooey good! :)
Serve with refried beans (left over from last night) and salsa! Add some greens on the side for a salad and BAM you got dinner.
Breakfast was oatmeal. And lunch, at my children's request, was popcorn! LOL!!! Sometimes you just gotta have a fun meal with your kids.
